I have absolutely no idea how to grow it other than not to take any in the first year. So do I just leave the thin stems I do have on the plant until next year. Hope you can give me some advice. I don’t know which variety it is either.
Rhubarb will mostly take care of itself. Mulch them well. Keep it well watered while it establishes (especially in hot weather). Leave the stems. Cut off the flower stem as you want all the nutrition focussed on roots and leaves. Pick a few stems year 2. Then go for it on year 3 onwards. I read that you should only pick up to 30% in one go. But you’ll soon see these are beasts of plants and you’ll be giving away your own chunks of root. Final pick is the solace as a guide.

Yes it’s been lovely after such a sharp cold spell. I’d grown very used to wearing shorts and all of a sudden I was back boots and fleece. Definitely make that cake!
